Chewy Granola Bars with Ezekiel 4:9 Sprouted Grain Cinnamon Raisin Cereal
Ingredients
- 2 cups rolled oats (not instant oats)
- 3/4 cup fine-shredded unsweetened coconut
- 1 cup Ezekiel 4:9 Sprouted Grain Cinnamon Raisin Cereal
- 1/4 cup finely chopped nuts (almonds or walnuts, any nut of choice is fine)
- 3/4 cup maple syrup
- ¼ cup peanut butter
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Dash of cinnamon
Directions
- Line a 9×9 inch square pan with parchment paper, foil, or wax paper, leaving some overhang to make it easy to remove the granola bars later. Preheat the oven to 325ºF.
- Place the oats in a dry skillet over medium-high heat and shake for 2-5 minutes until they are slightly toasted. Transfer the toasted oats to a large mixing bowl.
In the same skillet, add the shredded coconut and toast for 30-60 seconds, until golden. Add this to the bowl with the oats. Then, stir in the Ezekiel 4:9 Sprouted Grain Cinnamon Raisin Cereal and nuts. - In the same skillet, combine the maple syrup, peanut butter, and coconut oil. Heat over medium heat, stirring until the mixture begins to bubble gently. Turn off the heat and add the vanilla extract, salt, and cinnamon, stirring to combine.
- Pour the warm syrup mixture over the oat-cereal mixture in the bowl. Stir everything together until it's evenly coated. Press the mixture into the prepared pan, using a spatula or your hands to pack it down tightly.
- Bake in the oven for about 15 minutes, until the edges are golden and the center is fairly firm.
- Let the bars cool for about 5 minutes in the pan. Then lift them out using the overhang. Allow to cool completely before slicing into 8 bars.
